Bacon Candy Recipe
Makes about 40 servings
1 cup brown sugar
2 tsp Spice Authority Black Peppercorns, freshly crushed
12 oz thick cut bacon
Set your Kamado Joe for direct cooking (without deflectors) at 350°F. Mix together brown sugar and pepper in a small bowl. Lay out the bacon on your cooling grid. Cover each strip with an even coat of the brown sugar mixture. Place the cooling grid on a foil-lined pizza tray. Note: Do not coat the bacon while over the foil you’re going to be putting on the grill. The excess sugar that falls off while coating will burn and it will not smell good.
Place the tray on the grill and allow to cook until the bacon starts to crisp. Then gently brush the top of the bacon with Coombs maple syrup, flip the bacon, and brush the other side with Coombs maple syrup as well. Continue to cook until it is crisp and the fat is translucent . Allow the bacon to cool for a minute or two on the cooling grid before removing it to your cutting board (be careful! It’s very sticky!). Change the foil before you do the next round.
