Zingy Gazpacho Recipe

Getting ready to show our guests how to make Zingy Gazpacho in the Vitamix.

Here’s a quick and easy Gazpacho recipe from Laura, the manager of our Reading China & Glass store in Lancaster, Pa. It’s perfect for using those summer tomatoes from the garden, and the Vitamix does all the work for you. Laura’s recipe is a slight variation of a recipe she found on the Zing Zang website. We hope you love it as much as we did!

Zingy Gazpacho Recipe


  • 2 cups Zing Zang Bloody Mary Mix
  • 1 cup tomato juice
  • 2 small tomatoes, quartered
  • 1 cucumber, peeled & quartered
  • 1/2 small onion
  • 1 sweet red pepper, seeded & quartered
  • 1 garlic clove
  • 3 tbs white wine vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • 1 tbs lemon juice
  • Salt & pepper to taste
  • 3 ice cubes



Place the ingredients into your Vitamix in the order they are listed. Start on Variable 1 and quickly go to Variable 5. This will go quick! Roughly 30 seconds. We recommend serving with a heaping tablespoon of chopped cucumber and tomato on top, and another drizzle of EVOO.

As always, crusty bread on the side is a must! Enjoy!
