Growing up, I wanted nothing to do with spinach. I admit that as an adult, I have tried and failed several times to incorporate more spinach into my diet. With the best of intentions, I buy it, bring it home, wash it and tell myself that I will start eating healthier this week. (Okay; maybe next week.)
This is one of the reasons I can’t live without my Vitamix.
When Joanne, the manager at our Newington, NH store, told me about this healthy fruit smoothie recipe that she made during one of our free Vitamix demos last weekend, I just had to know what was in it. What made it so healthy? Why did it look so decadent and delicious?
The secret ingredient? Spinach!
Joanne knew that this healthy fruit smoothie recipe would be a hit with kids and parents alike. With the power of the Vitamix, kids will never notice the healthy dose of iron and Vitamin K. Parents will delight in the ease of giving their kids something delicious and nutritious.
And I will have no excuse not to use that freshly washed spinach in my fridge!
Joanne’s Healthy Fruit Smoothie Recipe
- 1 cup spinach
- 3 strawberries
- 1/4 cup blueberries
- 2 peach slices
- 1 1/4 cup water
- 4 ice cubes
In your blender, puree the spinach, strawberries, blueberries, peach slices, water and ice cubes until smooth.
Pour into a glass and serve cold.
