This recipe is so simple that you have to see it to believe it. That’s just what Joanne accomplished last month at our Vitamix demo, when she showed off how to make this seasonal sensation. Our guests couldn’t believe it was that easy. Your guests won’t believe it either!
This is the perfect time of year to get fresh apples, apple cider and butternut squash that will make the recipe stellar. As a sidenote – I love to visit local farms, orchards or farmer’s markets in the fall. There’s nothing like biting into a fresh, crisp apple. Especially one that you’ve picked for yourself! You can really make this soup delicious by paying a visit to your local farm and picking the freshest gala apples you can find.
As for the rest of the ingredients, you likely already have them in your kitchen. Does it get much better than that?

Joanne’s Best Butternut Squash Soup Recipe
- 1/2 of a peeled butternut squash
- 2 gala apples
- 2 cups chicken broth
- 1 cup apple cider
- season to taste with curry powder, kosher salt and white pepper
Add all ingredients in to the Vitamix, and run the soup program for 8 minutes. Voila! You have the most delicious, piping hot soup ever! (Thanks for this recipe, Joanne!)
